Arborio rice is superfine rice originally from Piedmont, Italy. The grain of this variety of rice is about 7 x 3.4 millimeters. It also has a good ability to absorb liquid and seasoning. These characteristics make it ideal for preparing and creaming risotto and, in general, suitable for dry rice.

Be careful not to overcook it, or it can be particularly sticky! Always leave it slightly al dente.
